ALBUQUERQUE, N.M. (KRQE) – The New Mexico State Fair is a time-honored tradition for fairgoers and vendors alike. The 11-day event is rooted in family and community gathering over delicious meals.
“Well, this is one of the oldest concession stands here at the New Mexico State Fair. It’s been here since 1971. Same ownership, it’s been in the family. Same recipe, same location, since 1971,” explained Gabriel Mendoza, Co-Owner, The Original Green Chile Corn Dog On A Stick.
While many vendors have come and gone over the years, Rex’s Burgers and The Original Green Chile Corn Dog On A Stick booth have stood the test of time. “My father was involved with the company that did actually the Nebraska State Fair. So he said, ‘Sure, we’d do it.’ So we came out and we did it. And we’ve been here ever since,” shared Rex Thompson, the owner of Rex’s Burgers.

Both booths have stuck to their classic recipes all these years, with some colorful additions, but their unique products are what make them a New Mexico State Fair exclusive. “What we do is not easy, and most of the people here are doing this for the love of it. And you only get some of these products once a year,” continued Mendoza.
Lori Maestas, Co-Owner of The Original Green Chile Corn Dog On A Stick, as well as Thompson, grew up at the fairgrounds surrounded by family. “I had my mom driving me and dropping me off here at the fair. I’ve been doing it ever since. Every single year, we’ve been here since COVID. We did miss one year, though, “explained Lori. And today, they get to share it with families of their own.

So what keeps these vendors coming back? Is there a secret to longevity at the fair? Vendors say the answer is plain and simple: customers, family, and passion.
“I mean, that’s what we do. I mean, that’s what I’ve done. You know, I wouldn’t know what to do in a September without it…I haven’t missed a fair since 1980. If it’s been on, I’ve been here,” said Thompson.
For the first time in its 54-year run, The Original Green Chile Corn Dog On A Stick booth will not only be at the state fair. Co-Owners Lori and Gabriel say their product will be making appearances at other festivals, allowing New Mexicans to have this treat more than once a year.
